Caprese Salad with Goat’s Milk Feta
4 medium vine-ripened tomatoes
handful sweet basil, I used a mixture of large and small leaves
8 oz high quality feta
2 Tbsp olive oil
1 Tbsp balsamic vinegar, optional
Slice tomatoes into 1/2 inch slices. Slice the feta into similar sized slices. Arrange the ingredients into the following pattern: Tomato slice, feta slice, basil leaf. Continue this pattern until all your tomato and feta slices are used up. Drizzle the salad with olive oil and balsamic vinegar. Sprinkle with pepper. Serve cold.
